Oat and Orange Muffins
Getting back on track with a healthy breakfast...
2 cups oat bran cereal
2 teaspoons baking powder
1 cup unsweetened soy milk
2 large eggs, beaten
2 tablespoons butter
1/4 cup pure vegetable glycerin
2 teaspoons special orange flavoring
1/4 cup chopped walnuts
Preheat oven to 400 F. Place all ingredients in a large bowl; mix until well blended. Batter will be lumpy. Sppon batter into greased muffin or paper baking cups, filling 2/3 full. Bake 15- 18 minutes. Test for doness with a toothpick.
I made it this morning and they were pretty tasty (not very sweet, but good).
